Good, good. The culture here is just deeply embedded.

The Latino culture is deeply embedded and also having worked in different

kitchens with a lot of different Latino chefs and seeing that it

could really be any kitchen,

any type of food and you look to the back of house

and you'll see Latinos cooking all types of food and you know

doing an awesome job at being able to do it and

really having those skills transferred to many types of food.

There is so much similarities.

We get our bread every day from a Panaderia and it's a

Central American bakery. But the pan Frances is exactly the type

of texture we use for our ban maize.

So many things, I mean,

we can just name it all the fresh herbs.

You know, the cilantro,

the Vietnam and Central America is on the same latitude.

So a lot of things just sort of grow similarly.

I see Latinos come and enjoying the food as well.

I see returning customers and people that I know are coming

and it's really nice to see like different cultures coming together.

And I really make it a point to train the staff to

do it. The specials we do for folks in the neighborhood

who can't afford it or are unhoused.

It's something that's been a mission of the restaurant for a long

time. Our mission is to do fresh,

affordable, flavorful Vietnamese food to pay our workers decently and also

to not turn anybody in need away in our neighborhood.

We've been here over three years and it's something,
